Many of the vivid colors and long shelf lives found in mass-produced food come from additives that have nothing to do with flavor. We don't use them. Our vegetables, herbs, and proteins are sourced and prepared the same day they're served — which means a slightly shorter shelf life, but a noticeably better plate.

Processed Daily, Not Stockpiled
Fresh herbs wilt. Good broth takes hours, not minutes. Prepping daily rather than in bulk is more work for our kitchen — but it's the only way to guarantee that the bún chả you order tonight tastes as bright and fresh as the one we served yesterday.

We hold full licenses related to ingredient origin, in line with Vietnam's clean food standards. It's not the most exciting thing to put on a menu, but it's one of the most important things we do behind the scenes.
